Inside Earl: The central Christchurch bistro that's become a local favourite
Earl founder Tom Newfield had to imagine his neighbourhood bistro long before anyone else could see it. When he returned to Christchurch in 2015, the site where Earl now stands was little more than mud. Today, the restaurant’s famous Tuesday pasta night regularly sells out, filling the dining room two or three times over, and eight years after opening, Earl has become one of Christchurch’s favourite local restaurants.
Tom’s vision for a European-style neighbourhood bistro has become reality, although the journey hasn’t always been straightforward. He says Earl has “grown alongside the city”, with both finding their identity as the central city has gradually come back to life.
The opening of One NZ Stadium at Te Kaha marks another milestone. Sitting just 200 metres from Earl, the stadium represents what Tom calls literally “the light at the end of the tunnel”. After years of roadworks and difficult access, seeing thousands of people walk past the restaurant on event nights is a reminder of how far both the city and Earl have come.
Bringing the vision of a neighbourhood bistro to life
Having spent years working in Melbourne, Tom fell in love with the city’s neighbourhood bistros, which also reminded him of the restaurants he admired in London and throughout Europe.
Returning home, he saw an opportunity to create something similar in Christchurch. The city’s rebuild plans showed new townhouses being built around the area, and he believed people would embrace living in the central city. It took longer than expected and Covid presented its own challenges but today that original vision has been realised.
“My goal was always to create somewhere warm and approachable, where dinner could still feel like a bit of a celebration.”
One of Tom’s first instructions to the builder was simple: “I want it to feel like guests are walking into my home.”
That thinking shaped everything from the open kitchen to the service style. The team are encouraged to think about what guests have experienced before they walk through the door.
“What sort of day have they had? Why have they chosen to spend their time with us? If we understand that, we’ll look after them better.”
That philosophy continues throughout the dining experience.

Many of Earl’s team have been there since the early days, helping create the consistency and familiarity that regulars have come to expect.
“They’re proud of what we’ve built, and people genuinely enjoy coming to work. Guests feel that.”
Local produce & simple food done well
At Earl, the focus is on simple food done well.
“We’ve always been guided by European cooking, particularly Italian, Spanish and French influences. People know what to expect when they visit, but we still like to surprise them with the occasional dish that’s a little unexpected.”
The restaurant has become particularly well known for its house-made pasta and freshly baked focaccia.
“We always joke, ‘Come for the focaccia, stay for the focaccia.’ It’s the first thing people smell when they walk in, and often the last thing they eat before they leave, as many order an extra slice.”
Alongside the pasta are classic bistro dishes made with quality local produce.
“It’s never about overthinking the food. It’s about cooking the best ingredients we can find and doing them justice.”
Local suppliers include Akaroa Salmon and Mischief with wines from Waipara (whose cellar door is at Riverside Market in the heart of Christchurch). Earl’s wine list is deliberately compact, with most wines available by the glass.
“If it’s on the shelf, you should be able to drink it.”
And for those in the know, Earl also offers complimentary parking beside the restaurant — a favourite tip among locals.
Pasta night has become a Christchurch institution
Following Covid, Tom wanted to give people a reason to return to restaurants. The answer was Tuesday pasta night: a big bowl of pasta and a glass of wine for $28.
Six years later, it has become one of Christchurch’s most popular weekly dining traditions.
One couple have attended more than 100 pasta nights, while countless others have made it part of their weekly or monthly routine.
“We’ve seen first dates turn into regular dates. Groups of friends meet every Tuesday. The music’s a little louder, the lights are a little lower, and the whole room has this great energy.”
For Tom, that’s what a neighbourhood bistro is all about.
“It’s somewhere people can drop in without needing a special occasion, but it still feels special when they’re here. That’s what we’ve always wanted Earl to be.”
